1 tablespoon olive oil

1 large onion, thinly sliced

1 teaspoon caraway seeds

1 pointed spring cabbage, sliced into 3 cm (1¼ in) ribbons

200 g (7 oz) spring greens, sliced into 3 cm (1¼ in) ribbons

400 ml (13 fl oz/generous 1½ cups) strong chicken stock

½ teaspoon cider vinegar

2 tablespoons crème fraîche

2 teaspoons Dijon mustard, plus extra to serve

sea salt and freshly ground black pepper

To serve

8 cooked sausages (either good-quality British pork sausages or German bratwurst style)

mashed or boiled potatoes
